What type of operations would you like to undo and redo?

Orbeon Forms does not have a built-in redo/undo functionality,
although that would be something great to have in the future.

If you want to have that type of functionality, you could probably
implement it by taking snapshots of XForms instances. But undo / redo
could be more complicated of course, especially if you interact with a
database or other external systems.
