How in Orbeon I can do data matrix like I draw in image?

I imagine you're asking the question in the context of Form Builder. By default, radio buttons will show aligned vertically, not horizontally as in your mockup. Besides that, if you really want to have a "table" format, with the labels as headers of the table, you'd need to do this with a "repeat": use a text output for the first column, and set the values ("candy", "salad", and "meat") by editing the instance. You'll let us know if this works for you.
