Short answer: you can't ;) ...
Longer version: checkboxes are displayed by Orbeon forms as xf:select
controls with a "full" appearance. xf:select controls are designed to
let users chose zero or more values which are stored as space separated
strings and since whitespaces are used as separators they can't be used
within values. Note that you can still include whitespaces in the labels
which are displayed to users.
