If I understand correctly, you want to change the page layout, this is
configurable in orbeon
its called a "theme" to change it you have to know a bit about xslt
For instructions see the page:

or WEB-INF/resources/config/theme-plain.xsl
If you dont want the other applications to exist remove their
directories from the apps directory.
you can configure which apps show up by editing the file
WEB-INF/resources/apps-list.xml
