Check RESOURCES/config/theme-plain.xsl. You will see there:
<xhtml:link rel="shortcut icon" href="/ops/images/orbeon-icon-16.ico"/>
<xhtml:link rel="icon" href="/ops/images/orbeon-icon-16.png"
type="image/png"/>
Modify theme-plain.xsl or, better, make your own theme stylesheet
under RESOURCES/config/ pointing to your own icons. Note that various
browsers support different file formats.
